6 must-have vegetarian recipes, that will have you drooling

Being healthy means being equipped with social, physical and mental well-being, not merely away from being diagnosed with a disease or infirmity. The word ‘healthy’ has always been the biggest enemy of foodies who gorge on junk or carb rich food which they can’t leave. Healthy food has been synonymous with plain and boring food which is not the case. Healthy food is that which contains all the nutrients in a balanced manner such that it affects your body in a good way, keeping you fit and active; thus giving energy and glow to the body.

Being healthy not only means consuming less carbs or avoiding sugar and junk, but also taking care of your body by eating well and exercising regularly.

After reading out these easy and healthy recipes given below, you’ll head straight to your kitchen to try one of them as they are lip-smacking and mouth-watering. Let yourself gorge on them and still don’t feel guilty about having a piece or a few spoons extra.

Let the extravaganza begin with following recipes:

1.Watermelon and cucumber smoothie

Total time: 5 minutes 
:  one 2-inch piece of cucumber, peeled and roughly chopped (about ½ cup), one slice reserved for garnish, 3 tbsp low-fat buttermilk, a bit of small lime juice (about 1 tbsp), 2 cups cubed seedless frozen watermelon, 1 tsp honey.
Directions: put the cucumber, buttermilk, honey and lime juice in a blender. Blend high until smooth. Add half of the frozen watermelon and blend until almost completely smooth. Turn off the blender and push down the ingredients with a spatula or spoon. Add the remaining frozen watermelon and continue to blend until smooth. Add 1-2 tbsp of water if needed to adjust consistency. Pour into a glass and garnish with a slice of cucumber.

2.Spicy mixed vegetable soup

Total time: 35 minutes
Ingredients: 1 onion, 1 broccoli head, 1 large red bell pepper, 1 large leek, 2 medium carrots, 1 cup vegetable stock, coconut oil, chilli powder, salt and pepper powder.
Directions: chop vegetables into small pieces. Heat saucepan to medium and add coconut oil. Add onions first, then red bell peppers, add broccoli and leek. Put liquid on saucepan and then put it on low. Saute vegetables in pan for 2 minutes. Add vegetable stock to the pan. Add seasoning, chilli powder as much as you like. Simmer for 10-15 minutes and enjoy with the garnishing of pepper powder.

3.Microwave mustard mashed potato

Total time: 20-30 minutes
: 1 large dish with lid, ½ kg potatoes, 1 spring onion, water, pinch of salt,1 tsp butter or olive oil, 1 tbsp of wholegrain mustard, ½ cup milk.
Directions: start boiling six cups of water in a pan. Peel and wash the potatoes, then chop. Put them in the boiling water and cover with lid. Add in a pinch or two of salt and cover the dish. Place into the microwave and cook on full power for around 12 minutes or until potatoes break up easily. Slice spring onions. Drain water from the potatoes and mash them. Add milk, butter and mustard and whip with a fork until smooth and creamy.
You can serve them well with sausages or any other cutlets or something.

4.Tuscan white bean soup

Time taken: 35 minutes
Ingredients: 2 tbsp extra virgin olive oil, 1 finely chopped small onion, 2 diced celery stalks, 4 minced garlic cloves, 2 tsp dried oregano, 1 tsp dried thyme, 1 tsp dried basil, 1 tsp dried ground sage, 2 diced carrots, 2 chopped tomatoes, 5 cups vegetable stock, 1 can cannellini beans, 1 pinch salt and pepper to taste.
Directions: Heat olive oil in a large pot over medium heat, and then add onion, celery and garlic. Cook for about 3 minutes. Add oregano, thyme, basil, sage, carrots and tomatoes and stir to combine. Cook for 5 minutes while stirring. Add vegetable stock and cannellini beans, and bring soup to simmer. Let it simmer for 10 minutes. Put 1/3 – ½ of the soup in blender and blend until creamy. Return it to pot and stir well. Add salt and pepper to taste. Garnish with basil leaves.

5.Hot and spicy curried tofu scramble

Time taken: 20 minutes
: chopped tofu, 1 chopped small onion, 1 tsp ground cumin, 1 tsp dried chilli flakes, 1 tsp fennel seeds, 1 tsp ground turmeric, 1 bag of washed baby spinach leaves, squeezed lemon juice (about 2 tsp).
Directions: heat one tbsp of olive oil in a large frying pan over medium-high heat. Add chopped onion and cook till becomes translucent. Add spices and stir. Cook for 30 seconds until the mixture is fragrant, and then add cubed tofu. Gently stir and cover the pan for 2-3 minutes. Add spinach and stir well, then add lemon juice and stir as the spinach finishes wilting, about 10-15 seconds.
Plate and serve the dish.

6.Vegetarian West African peanut soup

Time taken: 45 minutes
Ingredients : 6 cups vegetable stock, 1 medium chopped red onion, 2 tsp chopped ginger, 4 minced garlic cloves, 1 tsp salt, 1 bunch kale( ribs removed and leaves chopped into 1-inch strips), ¾ cup unsalted peanut butter, ½ cup tomato paste, hot sauce like sriracha, ¼ cup roughly chopped peanuts.
Directions: In a medium pan, bring stock to boil. Add onion, garlic and salt. Cook on low-medium heat for 20 minutes. In a medium-sized bowl, combine peanut butter and tomato paste, and then transfer 1-2 cups of hot stock to bowl. Whisk the mixture until smooth, then pour the mixture back into the soup and mix well. Stir the collard greens and season the soup with hot sauce to taste. Simmer for about 15 more minutes on medium-low heat with constant stirring. Serve with brown rice and top it with chopped peanuts.
